Healthy & Fried Fish Tacos

Everyone loves tacos. Everyone.
If someone ever tells you they don’t, stay calm. Stop making eye contact and slowly walk away. That person is a pathological liar and can’t be trusted.
There is a taco in this world for everyone. So if you don’t like tacos and swear you’re not a pathological liar then that to me just says you’re flat out lazy.

Lemon Garlic Green Bean Salad

Fun fact: When I was 7 years old, I found a worm in my green bean while being forced to sit at the dinner table to until I ate them. The best part? My mom told me to stop eating the beans. No one ate their green beans that night. I basically saved the day.
Twenty plus years later, green beans are one of my preferred vegetables.

I Drink Sparkling Water Now (+ A Recipe)

If you don’t know, I gave up soda just over two years ago. One day, out of the blue, I started craving that fizzy, deliciousness. Who was I? What was I becoming? A monster? Was I losing my sense of self?
I was scared. Nervous. Confused. A bottle full of emotion.
I decided to give fruit-infused sparkling water a try. I haven’t looked back since.

Stubb’s Legendary Bar-B-Q reached out to me asking if I’d share a recipe and do a giveaway. I was quick to say yes because Stubb’s is actually my favorite brand of barbecue sauce.

5 Ingredient Rice Paper Spring Rolls

If you follow me on Instagram, then you know I recently had my first Vietnamese Pho experience. It was great, but something I didn’t capture was the rice paper rolls Mr. Vetere and I had as an appetizer. I love the texture of the crispy vegetables, rice noodles and wrapper.

Extra Peanutty PB & J Overnight Oats

Does anyone else get upset when they can’t taste peanut butter in a recipe? I’m assuming you’re shaking your head “yes” because there is in fact, no other correct answer to that question.
I have mixed feelings about peanut flour. If you’re unaware, peanut flour is ground up peanuts with the fat removed.

Raspberry Coconut Pudding Cups

Hello! I realize I’ve been absent a lot lately, but I should be getting back on track this week. Everything is already planned and ready to be posted.
Next, onto this very easy and delightful recipe! It’s only 3 ingredients and it’s very easy to just toss it together the night before the day you want to eat it.
I love pudding, but not so much that I would eat it over ice cream.


Blueberry Oat Muffins

I’ve been working on a muffin recipe for quite some time now that would be a quick grab-n-go option for mornings when I don’t necessarily want to eat a bowl of oatmeal or a pancake.
Of course, it’s still oatmeal. I like starting my day with oatmeal because it keeps me full until lunch. Mornings without it aren’t the same.

5-Ingredient Salsa Verde Tacos

I mentioned these tacos in a post last week and I’m still not over them yet. I just don’t see that happening anytime soon.
It’s only five ingredients and delicious. Sometimes I have trouble finding salsa verde in my small town, so if that sounds like a dilemma, don’t fret! Regular red salsa will work great too.
