I love cooking and creating my own recipes, but I also love trying other recipes and techniques. Here is a list of my favorite recipes around the web! Beware: Most of them are very indulgent! 

 

Chicken Meatballs

I cheat and use jarred sauce because it makes this recipe that much quicker. These meatballs are so simple, yet so tasty. They also freeze well, but they usually don’t last more than 3 days with having Mr. Fitness around. 

 

 

Asian Orange Chicken

When Mr. Fitness and I moved into our house, we immediately started painting. I quickly realized that I hate painting and it makes me extremely whiny. I found this recipe and told him that I couldn’t paint because I wanted to make this. He didn’t quite buy it, but it turned out so delicious that he didn’t mind. He usually requests it as his birthday dinner. 

 

 

Eggplant Rollatini 

This recipe is soo good, it turns out even better than my Italian father-in-law’s! It is easy but takes a lot of time to put together. It’s great for a dinner party because you can make it ahead of time and just pop it in the oven later. 

 

 

Mozzarella Stuffed Meatballs 

These meatballs are easy but look very impressive! This is also great for a dinner party and they freeze well. If I planned a dinner party in advance, I will make these the week before and freeze them. It makes for easier preparation and clean up the day of. 

 

 

Paella

Paella is one of Mr. Fitness’ favorite dishes. He loves to order it out when we visit his dad in North Jersey. I wanted to surprise him for so long by making it on my own, but saffron is so expensive. It also seems like an intimidating dish. I sucked it up and bought the saffron and this came out great! 

 

 

Pan-Roasted Chicken with Lemon-Garlic Green Beans

I found this recipe on Pinterest and was feeling ambitious on a weeknight. It was so easy and Mr. Fitness-approved. He requests this all the time. In fact, it’s in my oven right now. 

 

 

Irish Beef Stew

Again, Mr. Fitness-approved. It freezes well and is very easy. Great to throw in the slow cooker for a football party. 

 

 

Seafood Risotto 

I think most people are afraid to make risotto. It seems intimidating, but it is just time consuming. Don’t be afraid! 

 

 

Baked Apricot Chicken

This is so easy and so good. I first had it a friend’s, Andrea, dinner party and Mr. Fitness devoured it. He, himself asked for the recipe. Andrea said “okay, but it sounds really gross.” The ingredient list looks gross, but you are just going to have to trust me on this. It’s delicious! 

 

 

Slow Cooker Taco Soup

I love making soup in the slow cooker on a Sunday and then freezing it in individual servings to take for lunches. This recipe is great for that. It’s easy and flavorful! Whenever I heat it up, my co-workers always comment on how good it smells. 

 

 

Pumpkin Roll

Pumpkin rolls used to seem extremely intimidating to me, but then I tried this recipe and now I’m a pro! 

 

 

Cinnamon-Apple Chex Mix

I made this for party favors once and people went wild. It’s very easy and only requires a microwave! 

 

 

Famous No Coffee Pumpkin Latte

Again, I made this for the same party that I made the Chex mix for and people went crazy over it. 

 

 

Chocolate Chip Cookie Dough Brownies

I know, you are probably already drooling. I love to make these for a party for 2 reasons; 1. It makes it harder for me to eat the entire tray and 2. I think people love me more when I make these brownies. I’m not kidding, these brownies will be the star of the party. 

 

 

Cheesecake Cookies

I will eat these all day long if I could. 

 

Chocolate Covered Peanut Butter Ritz Crackers

I made this last year for a Christmas function and people couldn’t stop eating them, including myself. They taste similar to the girl scout Peanut Butter Patties. And they’re so easy, you can’t beat that.
