Kale Salad With Broccoli Slaw, Dried Cherries, & Sunflower Seeds)

  • 12 oz bag of broccoli slaw
  • 5 oz of kale, chopped
  • ½ cup of dried cherries
  • ½ cup of sunflower seeds
  • 12 oz of cooked chopped ingredients
  • dressing of choice (I love honey mustard or balsamic vinaigrette with this)
  1. Combine all ingredients and enjoy!


I got a salad just like this at Trader Joe’s last week. I loved it sooo much I’ve been eating this since Saturday. The crunchiness of the broccoli slaw and crunchy sunflower seeds makes this fun to eat. It is also extremely easy to prepare. You have two options here, you can combine the kale, broccoli slaw and cherries in a container in the fridge and add the chicken and seeds before serving OR you can just keep everything together in the fridge and toss the ingredients in plasticware the night before or morning of. 

For the chicken in this recipe, I am just using my baked chicken recipe (that doesn’t make me gag) that I posted a few months ago. We ALWAYS have this in our fridge. Not even sometimes, really. Either myself or Mr. Fitness cooks two huge packs of chicken for the week or I do. I eat about 1/8th of it and he eats the rest. It freezes well or keeps in the fridge all week. Do yourself a favor and chop the chicken all at once ahead of time. 

Also, I used baby kale in this dish. Baby kale is great because it isn’t as bitter but really it was also the only organic kale I could find at the store. Regular kale works just the same. 

Okay, here’s the thing about this week… my breakfast is just as fabulous as my lunch. It has been months since I have eaten anything but oatmeal. The oatmeal era has come to and end with little flavorful breakfast sandwich of goodness:



This beaut is guacamole, a hardboiled egg, a slice of a fresh garden tomato (thanks Vicki!), salt and pepper on a Trader Joe’s Tortilla. In the words of my best friend, Elizabeth… Eeeeeeeeeeep! During the weekend I used a fried egg, but for work I hardboiled a few ahead of time. I just use store-bought guacamole, which is what I always use. Read the ingredient list when choosing one. I also toast the corn tortilla. They are conveniently small enough to put in the toaster. If you are eating this at work, a microwave will work too, just read the preparation instructions on the package.

If it seems like I am eating less this week, its probably because I am. I just haven’t been extremely hungry and I’ve also been eating a lot of ice cream at night which I plan on doing this week as well. Soft-serve twist in a cone with rainbow sprinkles, you know the drill. But mostly, my workouts have either been non-existent or moderate intensity. I have been trying to get more sleep vs. exercise these days which I will get into in the upcoming posts.
