Gradually getting used to my morning workouts has drastically changed my morning meals. Before I exercised in the morning, I would get up, get dressed, head downstairs, make and drink green juice and head to work. As soon as I would get into the office I would eat banana bread oatmeal. I was able to stick to this routine 2 days into exercising in the morning. On the 3rd morning I was much more adjusted and I was starving. I didn’t want oatmeal and juice alone wasn’t going to hold me over until I got to work. I threw this in the pan and I couldn’t have been happier.
Personal Spinach & Feta Frittata

Ingredients
- 1 cup fresh spinach
- 2 whole eggs
- 2 egg whites
- ⅛ tsp of garlic powder
- 1 oz. reduced fat feta cheese, crumbled
Instructions
- Heat a small pan over medium low heat.
- Add 2 tbsp of water and the spinach to the pan and cover.
- In a small bowl, mix together eggs, egg whites and garlic powder.
- Once the spinach has wilted, drain excess water from the pan. Leave the layer of spinach on the bottom and pour the egg mixture on top and cover.
- When the egg mixture is almost set (about 10 minutes on low heat) gently flip.
- Sprinkle the feta crumbles over the spinach and cover one last time until the feta melts.
- Slide the frittata onto a plate and serve.
