Show of hands, who is tired of winter? I’m pretty sure the only people who are still a fan of this agitating season are children who hate school. However, they will hate it come July when they haven’t started their summer vacation yet. I wasn’t able to finishing prepping everything for my weekly meal plan until tonight because of snow. I used to love winter because I love sweaters and boots. Screw you sweaters and boots, even you can’t keep me warm this season. I was unable to post my Ultimate Sandwich recipe last week because I didn’t have electricity for 3 days, but you can expect to see it later this week. 

Let’s talk food. 

Breakfast

I have this gross oatmeal that I need to eat up. I was working on a recipe this past weekend and it was a huge fail. It looks gross and tastes bland. It’s not even pictured. I used to eat oatmeal every. single. morning. I loved it, but lately I’ve been in the mood for more of a savory breakfast. That’s the egg and English muffin you see above… which bring me to my next rant. 

I get very upset over how difficult it is to find reasonably priced English muffins that are whole wheat, do not have high fructose corn syrup and/or sucralose. Today someone asked me if it would really hurt for me to just eat an English muffin with those ingredients in it. Probably not, BUT when I’m working on my weekly eats, I’m going to keep it as clean, healthy and minimally processed as possible. I eat plenty of other gross chemicals when I indulge on cookies, ice cream and other food favorites. I keep it out where I can. 

I also bought ingredients to make green smoothies. Green smoothies are important to me because it’s really the only way I will get vegetables in. I know I spoke a lot about juicing in the past, but it’s more expensive and more work. Green smoothies are filling and so much easier right now. 

Lunch

I made this slow cooker taco soup recipe. It was very easy and I made a few adjustments. I used just pinto beans instead of chili beans (chili beans are gross, look at the label), I used lean ground turkey breast because I had planned on eating beef this week (didn’t work out that way) and I used a clean taco seasoning mix. You would be surprised about what they sneak into taco seasoning packets. I also drained and rinsed the beans and just added a little bit more water. It is good, just a little more chili-like than I would have preferred. I’m going to pick up some blue corn tortilla chips tomorrow to eat with it!

Dinner

I think dinner is my favorite part of all of this. It’s spinach & white bean cakes. I developed the recipe for Rebekah so make sure you sign up for her newsletter so you can get access to this recipe coming out later this week and all the other recipes I’ve developed for her. 

Snacks

These Sweetheart Bites I created for The Sweaty Betties. They aren’t going to make it to the end of the week. Last week when I didn’t have electricity, I made homemade popcorn on my stove top. This was something my mom always did when I was growing up. She would make a HUGE bowl of it for movies or when we lost power and I forgot how much I loved it. Instead of popping it in oil and lots of salt, I opted to use my air popper. It’s delicious and perfect to grab for an evening or afternoon snack. I also have carrot sticks. I have mixed feelings about carrots, but I try to use them up when I buy them for a recipe.
